30 Minute Shepherd's Pie


Ingredients

* 2 pounds potatoes, such as russet, peeled and cubed
* 2 tablespoons sour cream or softened cream cheese
* 1 large egg yolk
* 1/2 cup cream, for a lighter version substitute vegetable or chicken broth
* Salt and freshly ground black pepper
* 1 tablespoon extra-virgin olive oil, 1 turn of the pan
* 1 3/4 pounds ground beef or ground lamb
* 1 carrot, peeled and chopped
* 1 onion, chopped
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1 cup beef stock or broth
* 2 teaspoons Worcestershire, eyeball it
* 1/2 cup frozen peas, a couple of handfuls
* 1 teaspoon sweet paprika
* 2 tablespoons chopped fresh parsley leaves

INSTRUCTIONS

Boil potatoes in salted water until tender, about 12 minutes.
Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If
you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second
small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and the shepherd's pie recipe is ready to serve...enjoy it !

Ingredients:
  • 1 lb. ground chuck (or regular ground beef, ground turkey)
  • 1/4 medium onion, chopped
  • 2 carrots, peeled and sliced diagonally
  • 1 c. sliced mushrooms
  • 6 medium potatoes, boiled and mashed (add milk, salt and butter as usual)
  • 1 pkg. brown gravy mix
  • 3/4 c. shredded sharp cheddar cheese

Instructions:

Brown ground chuck with chopped onions and drain, then set skillet aside while finishing the next steps. In three separate pots cook carrots, sauté mushrooms in a dab of butter and
prepare mashed potatoes if not already done.
Prepare gravy per package directions and add to ground beef, along with carrots and mushrooms. Cover and simmer on medium heat for a few minutes until thickened. Place beef mixture into a medium sized casserole dish and cover with mashed potatoes.
Drag a fork over the top of potatoes and sprinkle with the amount of cheese desired. The more the better. Place in 350-degree oven just long enough to melt the cheese. The Shepherd's pie recipe is ready..enjoy this delicious pie !

SHEPHERD'S PIE

SHEPHERD'S PIE ...try this nice shepherd's pie recipe....a traditional pie to try !

INGREDIENTS
  • 1 lb. ground beef
  • 1 lg. onion, chopped
  • Salt and pepper
  • 1 can cream style corn or any vegetable
  • Mashed potatoes

INSTRUCTIONS
Saute ground beef and onion until meat is browned. Drain off fat and season with salt and pepper to your taste. Spoon meat mixture into bottom of lightly greased 1 quart casserole spread corn over meat.
Add mashed potatoes over corn. Bake at 375 degrees about 25 minutes.
Place under broiler for 2 to 3 minutes if top isn't browned. The shepherd's pie recipe is ready to serve...hot ! Delicious indeed !

GOOD SHEPHERD'S PIE RECIPE...a nice one !

INGREDIENTS
  • 2 c. leftover mashed potatoes or 3 med. potatoes
  • 1/4 c. milk
  • 1/2 tsp. salt
  • Pinch paprika
FILLING:
  • 1 onion, chopped big
  • 1 tbsp. oil
  • 1 lb. broccoli
  • 1 green pepper, diced
  • 4 med. carrots, diced
  • 1/2 tsp. basil
  • 1 bay leaf
  • 3/4 c. chopped fresh tomatoes or 1/4 c. tomato paste & 1/2 c. water
  • 1 bunch spinach or Swiss chard
  • 1 tsp. salt

INSTRUCTIONS
Here's a happy home for leftovers. The vegetables will vary according to the season. A small amount of leftover lentil, pea or bean soup may be stirred in with the vegetables.
Unless you have leftover mashed potatoes, steam potato chunks or cook them in fast boiling water until soft. Mash well, adding milk and salt. Save the potato water for bread making.
Cut broccoli into florets and stems. Peel and slice the stems in 1/4 inch rounds. Wash spinach thoroughly and cut into bite-size pieces.
Preheat oven to 350 degrees. Saute onion in oil. Add broccoli, green pepper and carrots, then the basil and bay leaf. Stir well and add tomatoes. Bring to a boil, cover, turn heat to low and simmer for 15 minutes or until vegetables are just tender. Stir in spinach. Add salt.

Put vegetables into a 9 x 13 inch baking dish. Spread potatoes over top and shake paprika over all. Bake for 10-15 minutes, until the potatoes are piping hot. The Shepherd's pie recipe is ready to serve...enjoy the pie !

INGREDIENTS
  • 1/2 cup chopped onions
  • 2 lbs. chopped beef
  • 4 large sliced carrots
  • 2 cups peas
  • Small amount of cooking fat
  • 3 cups water
  • 6 cups mashed potatoes
GRAVY:
  • 2 cubes beef bouillon
  • 1 tsp. marmite bisto to thicken
Gravy ingredients are available from Fiesta.

INSTRUCTIONS
Cook onions in oil until transparent. Brown ground beef and drain off excess fat. Add water, crumble bouillon cubes, marmite and carrots.
Simmer gently for 10-20 minutes, stirring frequently, do not let it cook dry. Add more water if necessary. Mix bisto according to directions on tin and add to meat mixture, stirring continuously until the gravy thickens. Place meat mixture into an oven proof casserole dish, if the gravy covers the meat mixture drain off and reserve to use later. I would advise to make lots of gravy. Spoon peas over mixture, and top with mashed potatoes, making a design with a fork on top. Place under broiler until top is a golden brown and serve immediately with the extra gravy. The sheperd's pie recipe is ready for a great feast ! Enjoy it !

DRUNKEN SHEPHERD'S PIE

DRUNKEN SHEPHERD'S PIE RECIPE

INGREDIENTS
  • 1-1.5 lbs extra lean ground beef
  • 1 can corn niblets
  • 1 small can mixed peas and carrots
  • 1 package brown gravy mix
  • Newcastle beer (1/4-1/3 bottle)
  • mild cheddar cheese, shredded
  • 1 small yellow or Vidalia onion, diced
  • 6-7 cups mashed potatoes, seasoned and buttered to taste
  • (potato buds instant work very well)
INSTRUCTIONS
Melt 2 tablespoons butter and 1/4 teaspoons salt in a large skillet on medium heat. Dice onion into small squares. Add onions to butter and mix well to coat. Cook on medium low until very soft/transparent.
Add ground beef to onions, until very lightly browned and crumbled, add Newcastle Beer, continue to cook on medium-high and stir to keep meat small and crumbly, until done. Drain excess fat and beer from meat in colander, transfer to a separate bowl and cover.
Drain corn and peas/carrots in colander until all excess moisture is gone. Transfer to a separate bowl.prepare gravy mix (1 cup cold water, whisk in gravy powder slowly, bring to a boil, then remove from heat, continue to stir to prevent clumping, as soon as gravy looks smooth, add about 4 tbsp cold water, stir and mix into beef/onion mixture, cover and set aside. (mushroom
gravy works very well also)Prepare mashed potatoes to taste

In a medium casserole dish, add 1/4 pat of butter near each corner. Put either a layer of pie crust in, or a thin layer of mashed potatoes (or both) spread meat/onion mixture into casserole dish, add layer of mixed corn, peas, and carrots. add thin layer of cheese if desired, then top with a layer of mashed potatoes thick enough to reach 1/2 inch below the edge of the casserole dish.
Add a layer of shredded mild cheddar cheese (and another layer of pie crust if desired) and a few small pats of butter placed randomly on top of cheese and potatoes.

Bake at 350°F for 1 hour, or 425°F for 35 minutes.
If worried about burning cheese due to lack of pie crust topping, add cheese 1/2 way through cooking time.The Shepherd's pie recipe is ready...enjoy with friends....!

INGREDIENTS
  • 1 lb beef / lamb / veal and pork (mixed)
  • 5 oz chopped onion
  • 3 tablespoons butter or oil
  • 3 cloves garlic, minced
  • 1 1/4 cup stock / gravy / meat jelly
  • 1 teaspoon flour or cornstarch
  • tomato paste
  • 1 tablespoon Worcestershire sauce, or
  • 1 1/2 teaspoons wine vinegar
  • thyme, salt, pepper, cayenne
  • 2 lb potatoes
  • 1 cup milk (about)
  • 3 oz butter
  • 1 tablespoon grated dry cheddar
  • 1 tablespoon grated Parmesan
INSTRUCTIONS
Chop, process or mince the meat. Cook onion in the fat until soft.
Add the meat and garlic, stirring well; then raise the heat so that the meat browns.
Turn it over in large sections with a spatula, so that it browns all over. Pour off any surplus fat.
Add some of the liquid and bubble gently for 5 minutes. Sprinkle on flour or cornstarch, stir again and add the remaining liquid.

Let it bubble to a rich sauce, adding the various flavorings to taste.Meanwhile scrub, boil and peel the potatoes.Set aside a couple and slice them thinly. Mash the rest with the milk
and butter, seasoning to taste. Put the meat into a shallow dish.
Spread the mashed potato on top and, with the slices, make a ring around the edge. Scatter the cheese over, and brown under the broiler at a moderate heat, or at the top of a hot oven. The shepherd's pie recipe is ready ! Enjoy !
